Yes, my Wii Remote and nun-chuck works great on the Wii U and is one of the main alternative controlling options for most Wii U games.

Can I use an SD card or another form of storage to make up for the 8GB?

Either the SD card is only for WiiV (the Wii backwards compatibility mode) or its only for that and save games and some odd and end stuff like pictures that can be exported in some games. But any usb storage device can be used.
