I want them for my golf cart, can you switch the volt meter to 48 volts?

In the add it keeps repeating 12 volt ? I would either try contacting the manufacturer or try to find one rated for 48 volts. Good luck

Can i use this to turn my trolling motor on and off?

I don't know that I would use this for an on/off switch on a trolling motor. Trolling motors have thick gauge wires for a reason and I don't believe the switch will allow enough juice through to run the trolling motor at the capacity it should be ran at.

These look like carling switches. can switch covers be snapped off and replaced with carling covers?

Yes but the switch quality is rather low. I just replaced with genuine Carling switches. The rest of the panel is awesome.
